Although Sheik is a female, the persona was meant to be male originally. (IE Zelda disguising herself as a male in order to further throw off Ganondorf)

Nintendo originally supported this whenever the issue came up about the 'typo' in the Melee trophy description.

They didn't say she changed her body's...configuration. But did say that it was an effort to act male.
